The Node style defaults window shows the existing default visual styles for your model that are used unless you have explicitly changed the color for a particular node(s). By changing the colors of the various node types in this page you are changing the defaults for your model.

Clear Explicit Defaults

In the event of a model that already has numerous nodes created, the user can retroactively color their model using the buttons on the bottom left of the Node style defaults window.

Connect model nodes to defaults merely removes explicit settings for nodes that match the defaults shown in the window.

Reset all nodes' colors and styles will reset all explicit settings, regardless if they match the nodes above or not, and may change appearances. This is more powerful but is also the best way to make an entire model, regardless of individual changes to node styles, adhere to a new given style.
